Cabbage has long been known for its remedial properties. In ancient times its juice was used by the Greeks to help treat mushroom poisoning as well as constipation, while ancient Egyptians would eat it before a meal to prevent them being over intoxicated on wine. Todays’ studies reveal its ability to reduce blood sugar levels, aid in weight loss and improve kidney function, making it an ideal green to include in ones’ diet.

Cabbage is rich in fibre which is vital for bowel health, as well as slowing down the bodies absorption of glucose. Research shows that a diet high in leafy green vegetables is associated with an overall lowered risk of developing type 2 diabetes by a total of 14 percent.

Ingredients

3 cups of shredded Green or Red Cabbage
½ cup of diced Cucumber
½ sliced celery
6 Spring Onions, chopped finely
¼ cup of low-fat and healthy salad dressing of your choice (OR REFER TO RECIPE BELOW)
1 tablespoon of Tomato juice
1 tablespoon of Lemon juice
¼ cup lightly roasted silvered Almonds

Salad Dressing:

Step 1
1 clove of garlic (minced)

Step 2
2 tablespoons of Olive Oil

Step 3
¼ cup Lemon Juice

Step 4
½ tablespoon of finely chopped basil

Step 5
2 tablespoons of finely chopped Parsley

Step 6
Dash of salt and pepper to taste

Preparation

Step 1
Combine vegetables

Step 2
Mix salad dressing, tomato juice & lemon juice

Step 3
Just before serving, fold the dressing and nuts through the vegetables
