Apple Cake is the perfect cake to share on family get togethers or to bring along to a dinner party. Serve it with your favourite herbal tea to make it the perfect morning or afternoon break.

Apples are extremely rich in important antioxidants, flavanoids, and dietary fiber. The phytonutrients and antioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease.

What you’ll need for the perfect apple cake:

3 medium apples, peeled and thinly sliced
2 tbsp water
½ cup sugar
½ cup margarine
½ cup unsweetened apple puree
2 tbsp non-dairy milk
1 cup plain flour
½ cup wholemeal flour
2 ½ tsp baking powder

TOPPING
¼ cup brown sugar
½ tsp cinnamon
½ tsp ground ginger

Method
  1. Preheat oven to 180 degrees C and grease a 23cm spring-form cake tin
  2. Cook apples in water until they are just a little soft but not mushy (microwave 1 ½ minutes on high), then set aside
  3. Cream margarine and sugar, add apple puree and milk, then mix again. Add flour and baking powder. Stir until just combined
  4. Pour batter into the prepared pan and arrange apple slices on top
  5. Mix together brown sugar, cinnamon and ginger. Sprinkle mixture over the top of apple slices
  6. Bake for 30-40 minutes or until a toothpick comes out clean. Allow cake to cook for 15 minutes before removing from the tin
  7. Store in a covered container in the refrigerator. This cake is best eaten on the day it is made

Variation: Replace ½ cup margarine with an extra ½ cup of unsweetened apple puree.
