Fruit Salad with Pineapple Cream is the perfect recipe for Australia day celebrations! This summer dessert is sure to please your guests, don’t tell them how healthy it is ;)

Pineapples are tropical fruits that are rich in vitamins, enzymes and antioxidants. They may help boost the immune system, build strong bones and aid indigestion. These tropical fruits are also a good way to get important dietary fiber and bromelain (an enzyme).

Kiwis are small fruits that pack a lot of flavor and plenty of health benefits. Their green flesh is sweet and tangy. It’s also full of nutrients like vitamin C, vitamin K, vitamin E, folate, and potassium. They also have a lot of antioxidants and are a good source of fiber.

Ingredients

PINEAPPLE CREAM

½ cup pineapple juice
1 cup fresh or canned pineapple
½ cup raw cashews
1 tsp vanilla essence
pinch of salt

FRUIT SALAD

2 kiwi fruit, peeled and chopped
½ fresh pineapple, peeled and chopped
1-2 cups of red grapes
2 oranges, peeled and cubed
1 punnet of strawberries
½ rockmelon, peeled and cubed
passionfruit pulp (optional)

Method: Pineapple Cream

  1. Place all the ingredients into a food processor.
  2. Process until thick and creamy, adding extra water if necessary
    Variation: Use pears in place of pineapple for a completely difference flavour

Method: Fruit Salad

  1. Mixed all the fruit in a bowl
  2. Serve fruit salad with pineapple cream topped with passionfruit pulp.
    Variation: use whatever fruit is seasonally available. If fruit is out of season, use canned fruit
