Ingredients

6-8 large potatoes, peeled and diced
3 leeks (or more)
1 tbsp olive oil
2 vegetable stock cubes
5 cups of boiling water
½ tsp thyme
Pinch of pepper
2 tbsp chopped parsley

Method:

Step 1
Heat the oil in a large saucepan and sate leeks until soft.

Step 2
Add remaining ingredients, except parsley.

Step 3
Simmer for 30 minutes or until soft

Step 4
Blend in food processor or blender when cool.

Step 5
Reheat to serve and garnish with parsley
