These Seed Crackers are a delicious healthy snack anytime of the day. They taste great on their own or with your favourite dip. Sunflower seeds are high in healthy fats and protein and low in carbs. They are rich in magnesium, a mineral that may aid in blood sugar control. They have the ideal nutrient ratio for a diabetes-friendly snack.

What you’ll need:

1 cup of sunflower seeds
1 cup of pumpkin seeds
½ cup of chia seeds
½ cup sesame seeds
¼ cup of linseeds/flaxseeds
¼ cup of poppy seeds
1 tbsp of fresh, chopped parsley
1 tbsp of fresh, chopped curry leaves
1 tsp of onion salt
1 tsp of garlic salt
1.5 cups of water

Step 1
Place all ingredients in a bowl and combine well.

Step 2
Let sit for 10 – 15 minutes for seeds to soap up the water

Step 3
Spread mixture onto a pan lined with baking paper, place in pre-heated oven (170 degrees) for 50 minutes.

Step 4
After 30 minutes, take out and flip onto the baking paper

Step 5
Break into shards and enjoy with your favourite dip!
