Tuscany Potatoes is a perfect recipe for those winter nights, entertaining friends! It is a delicious way to enjoy vegetables and is today’s Monday Munchies recipe.

What you’ll need:

3kg potatoes
2 tsp turmeric
spray cooking oil

TOPPING:
1 onion, chopped
2 cloves of garlic, crushed
1 red capsicum, chopped
1/2 tsp oil
2 x 420g cans of chopped tomatoes
420g can of chickpeas, drained and rinsed
1/2 tsp salt
parsley, chopped
lemon juice (to serve)

Step 1
Preheat oven to 180C. Slice unpeeled potatoes into 1cm thick slices.

Step 2
Coat with turmeric and spray oil, and place in roasting dish. Roast for about 1 hour until potatoes are cooked (turn at least once).

Step 3
Place onion, capsicum and garlic in a large cooking pot with oil. Cook for about 5 minutes until clear. Add tomatoes and chickpeas, then mash. Season to taste.

Step 4
Place potatoes on a platter and squeeze lemon juice over them. Cover potatoes with tomato topping mixture. Garnish with parsley. Enjoy!
