These tasty Vege Wrap Stacks are sure to be a hit with the whole family. Layers of mouth watering cooked vegetables and tortillas will satisfy everyone’s appetites.

What you’ll need:

4 Tortilla wraps
375g low salt tomato paste sauce
4-5 cups of assorted, thickly sliced, cooked vegetables such as sweet potato, potato, zucchini, chargrilled eggplant, capsicum and fresh spinach
Fresh basil leaves (optional)

Step 1
Lay a wrap in the bottom of a baking dish. Spread with pasta sauce and place a layer of vegetables on the wrap. Repeat using all the vegetables, to create and second and third layer.

Step 2
Pour the remaining pasta sauce over the third layer of the vegetables, then place the fourth wrap on top.

Step 3
Cover with foil and bake at 180C for 20-30 minutes. Remove from the oven and leave to stand for a few minutes.

Step 4
Serve garnished with fresh basil leaves and enjoy with a friend!
