Asparagus belongs to the lily family and is low in calories yet high in essential vitamins, minerals and anti-oxidants such as folate (great for pregnancy and child development), rich in vitamin A, C & K. It assists in weight loss, improves digestion as it contains high amount soluble fibre and helps lower your blood pressure, of which is a risk factor for strokes and heart disease. Because asparagus is a good source of potassium it helps maintain heart health and prevent disease.

Ingredients

340g asparagus spears
1 clove of garlic
1 tbsp ground almonds
dash of paprika

Preparation

Step1
Place all ingredients into a food processor or blender and process until smooth

Step 2
If too thick, add a small amount of water

Step 3
Pour into a saucepan and boil until mixture reaches desired consistency

Step 4
Pour over steamed vegetables

Optional: garnish with flaked almonds
