Hearty Valentines’ Day Banana & Cinnamon Waffles (with Almond Cream)

Everyone loves a toasty waffle that’s covered with something sweet and nice. In today’s Monday Munchie we’ve chosen a sweet that you can share with your special someone. Almonds are ones of the highest sources of protein among all seeds that is high in copper, magnesium and calcium. Almonds have been shown to reduce glucose and insulin levels after meals, as well as reduce your risk of heart disease according to studies.

Some easy ways to incorporate Almonds into your everyday meals include:

  • having a handful with a piece of fruit
  • replacing your peanut butter with Almond butter instead
  • adding toasted Almonds to salads
  • adding chopped or crushed almonds to your rice, pasta or vegetables
  • combining almond meal with your cereals, porridge or smoothies

And remember your health is important not only for you, but also so you can be there to support your loved ones.

Ingredients

Waffle: (serves 3)

1 cup of unsweetened almond (or any nut based milk)
1 large ripe peeled banana
4 tablespoons of almond butter
1 tablespoon of maple syrup
1 pinch of salt
½ cup of buckwheat flour
½ teaspoon of ground cinnamon

Almond Cream

¼ cup of Almond meal (process whole almonds till fine)
¼ cup of hot water
¾ cup of light coconut cream
1 tablespoon of honey
½ teaspoon of vanilla
1 ½ tablespoon of cornflour

Preparation

Waffle:

Step 1
Preheat the waffle maker ensuring it is medium to high temperature before use.

Step 2
Mix all ingredients except the buckwheat flour in a blender till smooth, then add the buckwheat powder and blend till smooth

Step 3
Place appropriate amount of the mixture into waffle maker and bake till golden brown.

Step 4
Place waffle on a plate and serve with your favourite toppings or almond Cream

Almond Cream:

Step 1
Whisk almond meal with hot water in a small saucepan. Add remaining ingredients and whisk until smooth. Stir constantly over medium heat until boiling and thickened. Cool, then refrigerate.

Step 2
Blend with a little extra water or coconut milk if a thin cream is desired.
