These delicious fruit truffles are perfect to take along to a dinner party, a birthday party or any special event shared with family and friends. Ingredients
1 cup dried fruit of your choice
1 cup jumbo raisins
¾ cup cashew nut pieces
1 tsp lemon juice
1 tsp lemon rind
¼ salt
¼ cup desiccated coconut (for coating)
Step 1
Place ingredients – except coconut – in a food processor and process for 1 – 2 minutes until the ingredients start to stick together. Process another 15 seconds, adding a little water if mixture is too dry
Step 2
Place coconut in a bowl. Take teaspoon-sized portions of fruit mixture, shape into balls and roll in coconut. Place in an airtight container and chill in fridge until ready to serve.
