German Pasta Bake is a great recipe if you are ever stuck for dinner ideas, or what to cook when having company over? This delicious, healthy and hearty dish is not only a taste bud winner for the whole family, but it contains ingredients that will help you promote a healthy and long life.

German pasta bake contains tofu, which is an excellent source of amino acids, iron, calcium and other micro-nutrients. Tofu is a versatile ingredient with many health benefits.

Ingredients

SAUCE
½ cup raw cashews
1 cup non-dairy milk (soy, almond, rice or cashew milk for example)
Tbsp plain flour
1 ½ vegetable stock cubes
Tsp savoury yeast flakes
Tsp onion powder or ½ an onion
¼ tsp celery salt
½ cup soft tofu (150gr)
Tbsp lemon juice
1 ½ cups of water

PASTA
2 cups of dry macaroni
A cup regular tofu, mashed
1/3 cup parsley
1 onion, chopped or 6 spring onions, chopped
Tbsp savoury yeast flakes
½ tsp dill
Tsp mixed herbs
1 cup fresh breadcrumbs
Tsp Italian herbs (optional)

Method

SAUCE

Step 1
Chop cashews in food processor or blender until powdery

Step 2
Add other sauce ingredients and process until smooth

PASTA

Step 1
Cook macaroni according to instructions on the packet

Step 2
Combine tofu, herbs, yeast flakes, onion or spring onions and pasta in a casserole dish. Pour sauce evenly over pasta mixture

Step 3
Cover and bake for 30 minutes at 180 degrees C

Step 4
Uncover, sprinkle breadcrumbs over the top and cook for a further 15 minutes

Serve with a green or garden salad and enjoy with your family and friends. This dish will also be great for the holiday celebrations coming up!
