Ingredients
BASE
5 slices of wholegrain organic bread
½ cup of desiccated coconut
½ cup dates
FILLING
250 organic silken tofu, rinsed and drained
440g of pineapple pieces and juice
¼ cup water
½ cup of freshly squeezed lemon juice
2 tsp lemon rind
½ cup honey
½ cup organic cornflour
2tbsp desiccated coconut
Preparation
First make the Base
Step 1
Boil dates in a saucepan with water and boil for 5 minutes
Step 2
Place bread, coconut and softened dates in food processor, process until thoroughly chopped and mixed. Add some liquid from the boiled date if mixture is too dry to hold together
Step 3
Grease 20 centimetre pan and press base mixture in the tin.
Step 4
Bake at 180 degrees for 10-20 minutes until light golden brown
Next make the Filling
Step 1
Blend all ingredients until smooth. Pour into a medium saucepan and boil until thickened, make sure to frequently stir mixture so it doesn’t stick to the bottom of saucepan
Step 2
Pour onto baked base and smooth out.
Step 3
Sprinkle with coconut.
Step 4
Refrigerate for 7 hours before serving.
