Lemon Coconut Slice: Lemon is a powerful citrus fruit that provides multiple health benefits and is considered a superfood for diabetics by the American Diabetes Association. 5 slices of wholegrain organic bread
½ cup of desiccated coconut
½ cup dates
250 organic silken tofu, rinsed and drained
440g of pineapple pieces and juice
¼ cup water
½ cup of freshly squeezed lemon juice
2 tsp lemon rind
½ cup honey
½ cup organic cornflour
2tbsp desiccated coconut
First make the Base
Boil dates in a saucepan with water and boil for 5 minutes
Place bread, coconut and softened dates in food processor, process until thoroughly chopped and mixed. Add some liquid from the boiled date if mixture is too dry to hold together
Grease 20 centimetre pan and press base mixture in the tin.
Bake at 180 degrees for 10-20 minutes until light golden brown
Next make the Filling
Blend all ingredients until smooth. Pour into a medium saucepan and boil until thickened, make sure to frequently stir mixture so it doesn’t stick to the bottom of saucepan
Pour onto baked base and smooth out.
Sprinkle with coconut.
Refrigerate for 7 hours before serving.
