Roast Vegetables are a winter must! Our Monday Munchies recipe today is quick, easy, affordable, healthy and will please everyone’s taste buds.

What you’ll need:

Potato
Pumpkin
Kumara (sweet potato)
Parsnip
Zucchini
Flat mushrooms
Onion
garlic
Salt
Olive oil

Don’t like any of these veges? That’s fine! Swap it out for something you enjoy. That’s the beauty of this recipe.

Step 1
Use the amounts you desire, prepare the veges (scrub, peel etc.) and cut into even slices 1cm thick.

With the zucchini, cut in 1cm diagonal slices. Trim large flat mushrooms.

Peel and cut onion into wedges. Mince garlic.

Step 2
Lightly coat (or use spray oil) the veges with olive oil.

Cook on a double sided grill for 10-15 minutes, or roast at 200 degrees C in a baking dish for 20-30 minutes, turning halfway through.

Cook until golden brown and tender.
