Chocolate Nut Cookies are great for kids lunch boxes, or a nice snack throughout your work day.

Ingredients

1 cup rolled oats
1 cup wholemeal flour
½ tsp baking soda
½ tsp salt
½ cup dark chocolate chips or carob chips
½ cup sultanas
½ cup chopped nuts of your choice
½ cup canola oil
1 tbsp ground linseed
3 tbsp water
½ cup brown sugar
½ tsp vanilla

Step 1
Preheat oven to 170C

Step 2
Measure first 7 ingredients into a large bowl and stir to combine

Step 3
Place oil, linseed, water, vanilla and sugar in food processor and whiz until pale and creamy. Pour onto dry ingredients and stir until thoroughly combined

Step 4
Form into walnut-sized balls and press onto an oil-sprayed tray

Step 5
Bake for 10-12 minutes until golden. Enjoy!
