An Open Sandwich is a great idea for lunch or afternoon snack to keep you going. An open sandwich has less carbohydrates than a full one, and you can use whatever salad vegetables you like. Try some shredded carrot, sliced beetroot, avocado!
What you’ll need:
1 slice of wholegrain bread
Red capsicum hummus
1 small tomato
4 slices of cucumber
¼ cup of mixed lettuce and bean sprouts
Spread humus evenly over the bread
Place all other ingredients on top. Enjoy!
