This Beetroot Salad is bursting with flavour and colour. Beetroot is low in fat, full of vitamins and minerals and packed with powerful antioxidants, so make sure you try this recipe!
What you’ll need:
2 carrots, grated
1 large beetroot, peeled and grated
2 tbsp lightly roasted pumpkin seeds
2 tbsp sunflower seeds
¼ cup light vinaigrette
Salt and pepper to taste
Cos lettuce or baby rocket to serve (optional)
Combine carrot, beetroot, pumpkin seeds, sunflower seeds and vinaigrette in a bowl.
Season to taste. Serve on a bed of cos lettuce or baby rocket.
