Creamed Quinoa is our recipe for today, and is great for breakfast or an afternoon snack. Make it in mason jars and keep it in the fridge for a healthy breakfast on the go!
Here’s what you’ll need:
1 cup cooked quinoa
2 cups boiling water
½ cup light coconut cream
½ cup vanilla soy milk
1-2 tbsp honey
Step 1
Put quinoa and water into a medium saucepan. Cover and cook until water is absorbed.
Step 2
Add coconut cream, soy milk and honey to the cooked quinoa. Bring to the boil and reduce heat, allowing the mixture to thicken for about 15 minutes.
Step 3
Cover and chill in the fridge for several hours.
Step 4
Serve with fresh fruit and nuts. Enjoy!
