A tasty Kumara Salad is today’s recipe. This would be delicious hot as well as cold!
What you’ll need:
2 Kumara (sweet potatoes), cut into cubes
1 ½ tbsp of olive oil
1 tbsp of orange juice
2 spring onions
2 small oranges, peeled and cubed
1 tsp garlic powder (or one clove of crushed garlic.
Step 1
Steam or boil the kumara/sweet potato until just soft but not mushy.
Step 2
When cooled, place in another bowl, add remaining ingredients and mix until just combined.
Step 3
Leave to sit in refrigerator for 30 minutes before serving.
Step 4
Top with your favourite garnish and enjoy!
