What you’ll need:
1/2 cup cooked kumara (sweet potato) or pumpkin
1 clove garlic
415g can of chickpeas
1/4-1/2 tsp curry powder or cumin
3 tbsp peanut butter
3 tbsp lemon juice
1/4-1/2 tsp salt (optional)
1/4 cup liquid from chickpeas
Step 1
Place garlic and chickpeas in a blender or food processor, and process until finely chopped.
Step 2
Add Kumara, curry powder/cumin, peanut butter and lemon juice.
Step 3
Process until evenly mixed then add two tablespoons of the chickpea liquid and salt.
Step 4
Process until very smooth, adding extra chickpea liquid if necessary.
Step 5
Taste and add extra salt, if needed. Enjoy!
