Vegetable Pasta is a winner anytime! Add satay sauce to it and it becomes super tasty, quick and filling.
Here’s what you’ll need:
VEGETABLE PASTA
250 – 300 grams of wholemeal pasta or noodles
1 medium-large carrot cut into matchsticks
1 medium zucchini, halved and sliced diagonally
200g broccoli, cut into small florets, or green beans, sliced
DRESSING:
½ cup peanut butter
½ cup hot water
2 tbsp low-salt soy sauce
2 tbsp lemon juice
1 tbsp brown sugar
1 tsp minced ginger
Salt or garlic to taste (optional)
1 tbsp sweet chilli sauce
Step 1
Cook pasta according to instructions on the packet. When the pasta is almost cooked, add in the vegetables. Cook for 1-2 minutes longer until vegetables are just cooked.
Step 2
Combine dressing ingredients in a separate bowl, and mix to break up the peanut butter.
Step 3
Drain the vegetables and pasta well. Return to the saucepan, add the dressing and toss gently until well combined.
Step 4
Serve garnished with chopped spring onions and enjoy!
